- (1) Membuat minyak ayam : panaskan minyak lalu goreng kulit ayam, setelah itu masukkan semua bumbu, goreng hingga harum dan bawang putih agak kering..
- Pisahkan kulit ayam, nanti dimasak dg daging. Saring bumbu, sisihkan.(atau disaring pas mau dipakai aja)..
- (2) Membuat Kuah : Haluskan semua bumbu, kecuali jahe & daun bawang, tumis sebentar lalu masukkan ceker kedalam panci dg 700 - 900ml air, masukkan semua bumbu dan rebus hingga ceker matang. Tiriskan ceker & sisihkan kuah..
- (3) Membuat tumis ayam : Haluskan/ blender semua bumbu (kecuali jahe, sereh, salam & daun jeruk), baru kemudian tumis bersamaan jahe, sereh, salam & daun jeruk.
- Masukkan ayam, ceker dan kulit ayam yang digoreng tadi..
- Beri air sampai semua terendam, masukkan kecap, saus tiram, minyak wijen, garam & gula..
- Tambahkan daun bawang, biarkan air menyusut & mengental..
- (4) Meracik Mie Ayam : ambil 2- 3 Sdm minyak ayam, tambahkan secukupnya kecap asin & kecap manis, sedikit lada..
- Masukkan mie yang sudah direbus, aduk2 kemudian siram dengan tumis ayam, tambahkan ceker & sayur/ optional.
- Beri kuah beberapa sendok, sajikan.
